Beat the whites with a pinch of salt untill they are stiff. Beat the yolks with the sugar until they are light and creamy. The longer you beat them, the better. Then add the flour, the baking powder, the zest and mix well. Add the egg whites gently mixing very slowly with a wooden spoon. Put the mixture in a cake pan with a diameter of 24/26 cm coated with oven paper. Pre-heat the oven to 170°C then cook for about 40 minutes. Notes The classic recipe does not contain baking powder, but if you add a small quantity, it is easier to succeed.
